This fish recipe was born out of necessity! I planned on making beer battered fish for dinner one night, had everything prepared, but realized I had no beer! So, instead of stopping what I was doing, I decided to try Coca-Cola instead, and it worked beautifully. I've made fried fish that way every time now, the family loves it!!

Adding cola to the batter for fried fish is a wonderful alternative to beer. It acts as a leavening agent in the same way. The batter for this tialpia is crisp and light. Inside the pieces of tilapia are tender and flaky. We enjoyed the savory, spicy kick that the fried jalapenos added. They were a nice contrast to the sweeter fish. Make sure to have the lemon dill dipping sauce handy. It's tangy, creamy, and refreshing.

Ingredients

  • FISH
  • 1 pound tilapia fillets
  • 2 medium jalapenos
  • 1 1/2 cups cornmeal, divided
  • 1 1/2 cups all-purpose flour, divided
  • 1 teaspoon baking powder
  • 1 tablespoon seasoned salt
  • 1 tablespoon ground black pepper
  • 1 1/2 cups Coca Cola
  • 3 cups canola oil, for frying
  • LEMON DILL DIPPING SAUCE
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 2 tablespoons lemon juice, to taste
  • 1 teaspoon dill, dried or fresh
  • 1 teaspoon salt
