Ingredients For citrus ginger scallops

  • 4
    12-inch wooden skewers
  • 1 lb
    bay scallops
  • 1 tsp
    grated orange peel
  • 1/2 c
    orange juice
  • 1 tsp
    grated gingerroot
  • 2 Tbsp
    soy sauce
  • 1 clove
    garlic, minced

How To Make citrus ginger scallops

    Soak skewers in water. Rinse scallops and place in shallow glass dish.

    Stir together peel, juice, ginger, soy sauce and garlic and pour mixture over scallops. Cover; refrigerate 30 minutes, turning scallops once.

    Preheat grill to medium-high heat. Thread scallops onto skewers.

    Grill for 2 to 2-1/2 minutes. Turn and cook 2 to 2-1/2 minutes longer.
