cajun shrimp skewers on the george foreman grill
This is my way of preparing easy, indoor-grilled cajun shrimp with a hint of lemon. Simple and so delicious!

Ingredients
- 40 medium shrimp, peeled and deveined (thawed if using frozen)
- several dash cajun seasoning (like Louisiana brand)
- a pinch salt, to taste
- 2-3 tablespoons cooking oil
- 1/2 fresh lemon, sliced for squeezing and garnish
How To Make cajun shrimp skewers on the george foreman grill

Step 1Rinse and drain shrimp.

Step 2Preheat a grill on medium-high. (I use a George Foreman countertop grill.)

Step 3Skewering the shrimp: The first shrimp on each skewer will be skewered twice in order to form a kind of "stopper" to help keep the rest of the shrimp in place. Begin by inserting skewer through tail of shrimp, then insert it through the upper part of the shrimp. (No need to soak skewers.) You want to end up with a curled shrimp on a stick, lol.

Step 4Next, skewer nine more shrimp through the center of the belly and on through the back. Pack them together fairly tightly. Repeat process for remaining skewers.

Step 5Sprinkle shrimp lightly with cajun seasoning and a bit of salt. Brush with oil or dip in a dish with a little oil in it.

Step 6Open grill and place as many shrimp skewers as possible on it, without overcrowding (mine only holds 2.) Close lid, set timer for 1 1/2 minutes.

Step 7When timer sounds, flip skewers over and set timer for another 1 1/2 minutes. Repeat until all skewers are grilled.

Step 8Squeeze a bit of fresh lemon juice over all; garnish as desired. Serve immediately with melted butter or your favorite cocktail sauce on the side.
