1 lbbay scallops
7 Tbspbutter divided
2 tspcajun seasoning
1 cfresh mushrooms sliced
1/2 cgreen onions chopped
1/2 cchicken stock
2 Tbsplemon juice
·fresh parsley for garnish
How to Make Cajun Scallops in Lemon Butter Mushroom Sauce
- In a skillet add 4 tbsp butter. Place the scallops in the butter and sprinkle the cajun seasoning over top and sear on both sides for about 2 minutes per side. Remove to a plate and set aside.
- Add another tbsp of butter to the skillet and add the mushrooms and green onions and cook 4 minutes. Add the chicken broth and lemon juice. bring to a boil.
- Stir in the remaining butter. Add the scallops back to the pan and cook 1 minute. Garnish with parsley Serve immediately
