Ingredients

  • 1 pound bay scallops
  • 7 tablespoons butter divided
  • 2 teaspoons cajun seasoning
  • 1 cup fresh mushrooms sliced
  • 1/2 cup green onions chopped
  • 1/2 cup chicken stock
  • 2 tablespoons lemon juice
  • fresh parsley for garnish

How To Make cajun scallops in lemon butter mushroom sauce

  • Step 1
    In a skillet add 4 tbsp butter. Place the scallops in the butter and sprinkle the cajun seasoning over top and sear on both sides for about 2 minutes per side. Remove to a plate and set aside.
  • Step 2
    Add another tbsp of butter to the skillet and add the mushrooms and green onions and cook 4 minutes. Add the chicken broth and lemon juice. bring to a boil.
  • Step 3
    Stir in the remaining butter. Add the scallops back to the pan and cook 1 minute. Garnish with parsley Serve immediately
