Ingredients
- 8 ounces crab meat flaked
- 1 large egg
- 1/4 cup mayo
- 3 tablespoons butter
- 1 small shallot minced
- 2 cloves garlic minced
- 1 green onion small dice
- 2 tablespoons fresh parsley minced
- 1 teaspoon cajun seasoning
- 1/4 cup buttery crackers such as ritz
- 3 tablespoons grated parmesan cheese
- 2 tablespoons mascarpone cheese
- salt and pepper
- 2 pounds jumbo shrimp
- 1 lemon
How To Make cajun crab stuffed shrimp

Step 1Preheat oven 375 degrees. Line a baking sheet with parchment paper and spray with cooking spray.

Step 2Place the crab meat in a bowl. Season with salt and pepper. Add the egg and mayo and mix well. Set aside in fridge.

Step 3Place the butter in a saucepan. Once it melts add the shallot, garlic, green onions, parsley and cajun seasoning. Saute for about 3 minutes then set aside to cool.

Step 4once cool add to the crab meat mixture then crush the crackers and stir into the crab mixture. Add the mascarpone cheese and Parmesan cheese. Season with salt and pepper.

Step 5Peel and devein the shrimp. Cut them down the back to the tail but not all the way through. Place in baking dish then spoon 1 to 2 tbsp of crab meat mixture on top. Spray with cooking spray.

Step 6Bake until golden brown about 20 minutes. Serve with lemon wedges
