bacon grilled oysters
We live in Florida so I'm always cooking seafood. This is quick and easy. I added a note about how to do it with clams. Or if you're like us, I double the bacon topping, use it on oysters, then add wine and butter for clams and we have both oysters and clams.

Ingredients
- 18 large oysters on the half shell
- 1 tablespoon butter
- 1/2 cup sliced scallions
- 1 jalapeno finely chopped
- 1/2 pound bacon thinly sliced
How To Make bacon grilled oysters

Step 1Heat a charcoal grill to 450 degrees.

Step 2Place oysters on a seafood rack or nestle in a bed of coarse salt.

Step 3In a cast iron skillet, melt butter. Add bacon and scallion and cook until bacon is done.

Step 4Top oysters with the bacon mix and place on grill. Close lid. Cook until just done, don't dry them out.

Step 5NOTE - this is great on clams too - place clams on grill with lid up until opened. While cooking add 1/2 cup white wine to bacon mixture in skilled, cook down by 1/2, add another 2 tablespoons of butter. Remove clams to a bowl and pour the bacon mixture over.
