bacon grilled oysters

We live in Florida so I'm always cooking seafood. This is quick and easy. I added a note about how to do it with clams. Or if you're like us, I double the bacon topping, use it on oysters, then add wine and butter for clams and we have both oysters and clams.

Ingredients

  • 18 large oysters on the half shell
  • 1 tablespoon butter
  • 1/2 cup sliced scallions
  • 1 jalapeno finely chopped
  • 1/2 pound bacon thinly sliced

How To Make bacon grilled oysters

  • Step 1
    Heat a charcoal grill to 450 degrees.
  • Step 2
    Place oysters on a seafood rack or nestle in a bed of coarse salt.
  • Step 3
    In a cast iron skillet, melt butter. Add bacon and scallion and cook until bacon is done.
  • Step 4
    Top oysters with the bacon mix and place on grill. Close lid. Cook until just done, don't dry them out.
  • Step 5
    NOTE - this is great on clams too - place clams on grill with lid up until opened. While cooking add 1/2 cup white wine to bacon mixture in skilled, cook down by 1/2, add another 2 tablespoons of butter. Remove clams to a bowl and pour the bacon mixture over.
