T Daddy's Southern Tomato Pie

This is a great summertime dish when all the ingredients are fresh and available.

deep dish pie shell
4 large
vine ripe tomatoes
half medium
yellow onion
2 clove
2/3 c
grated sharp cheddar
2/3 c
grated mozzarella cheese
1/2 c
finely grate parm cheese
2 medium
10 large
basil leaves
1 Tbsp
chives chopped
1/2 c
bacon bits/chopped ham
1/4 tsp
cholula sauce
1 tsp
stone ground mustard
1 tsp
apple cider vinegar
ritz crackers crushed
1/2 c
mayonnaise,dukes or hellmans


1peel the tomatoes, slice, salt and put on a baking rack to drain for approximately one hour. Pat dry with paper towels to remove any water.
2Saute the chopped onion and chopped garlic and set aside
3Chop the basil leaves and set aside
4Preheat the oven at 350 degrees.
Remove the frozen pie crust from the freezer and let sit for 10 minutes. Pierce the crust with a fork in several places and bake for 15 minutes. remove from the oven and set aside.
5Beat the eggs and add the cheddar cheese, mozzarella cheese, mayo, mustard, cholula, vinegar, and chives to complete the topping. Combine thoroughly.
6put a thin layer of the topping on the bottom of the pre-cooked pie shell.
Put a layer of tomatoes and add a layer of sauteed onions, sprinkle chopped basil and bacon/ham pieces. Repeat this step to fill the pie shell.
7Spread the topping completely over the filling.
8Add the crushed ritz cracker crumbs to the grated parmesan cheese and sprinkle on the topping.
9Bake at 350 degrees on a baking sheet for 40-45 minutes.
10Remove from the oven and let sit for 10 minutes before slicing.
