This is a great summertime dish when all the ingredients are fresh and available.

Ingredients

  • 1 - deep dish pie shell
  • 4 large vine ripe tomatoes
  • half medium yellow onion
  • 2 cloves garlic
  • 2/3 cup grated sharp cheddar
  • 2/3 cup grated mozzarella cheese
  • 1/2 cup finely grate parm cheese
  • 2 medium eggs
  • 10 large basil leaves
  • 1 tablespoon chives chopped
  • 1/2 cup bacon bits/chopped ham
  • 1/4 teaspoon cholula sauce
  • 1 teaspoon stone ground mustard
  • 1 teaspoon apple cider vinegar
  • 5-6 - ritz crackers crushed
  • 1/2 cup mayonnaise,dukes or hellmans

How To Make t daddy's southern tomato pie

  • Step 1
    peel the tomatoes, slice, salt and put on a baking rack to drain for approximately one hour. Pat dry with paper towels to remove any water.
  • Step 2
    Saute the chopped onion and chopped garlic and set aside
  • Step 3
    Chop the basil leaves and set aside
  • Step 4
    Preheat the oven at 350 degrees. Remove the frozen pie crust from the freezer and let sit for 10 minutes. Pierce the crust with a fork in several places and bake for 15 minutes. remove from the oven and set aside.
  • Step 5
    Beat the eggs and add the cheddar cheese, mozzarella cheese, mayo, mustard, cholula, vinegar, and chives to complete the topping. Combine thoroughly.
  • Step 6
    put a thin layer of the topping on the bottom of the pre-cooked pie shell. Put a layer of tomatoes and add a layer of sauteed onions, sprinkle chopped basil and bacon/ham pieces. Repeat this step to fill the pie shell.
  • Step 7
    Spread the topping completely over the filling.
  • Step 8
    Add the crushed ritz cracker crumbs to the grated parmesan cheese and sprinkle on the topping.
  • Step 9
    Bake at 350 degrees on a baking sheet for 40-45 minutes.
  • Step 10
    Remove from the oven and let sit for 10 minutes before slicing.
