impossibly easy tuna melt pie

This is my own variation of the good 'ol Bisquick Impossible Pie. Tuna is a staple in my pantry and we enjoy it all of the standard ways - as salad, in sandwiches, and that old standby noodle casserole. So how about something different, I thought. This one has become a favorite. I usually serve it up with a side of broccoli/cauliflower and some corn muffins

Ingredients
- 1 can (7 oz).water pack tuna - drained
- 8 ounces shredded cheddar cheese
- 1/2 cup chopped onion
- 1/2 cup celery - sliced thin
- 1/2 cup bisquick
- 1 cup milk
- 2 - eggs
- 1/2 teaspoon salt
- - tomato slices
How To Make impossibly easy tuna melt pie

Step 1Heat oven to 400 degrees F. Spray 9-inch glass pie plate with cooking spray.

Step 2In small bowl, break up tuna with fork, stir in celery and onion. Spread in pie plate, then sprinkle cheese on top. For variety, you can use grated swiss instead of cheddar. Or a half 'n half mixture of the two.

Step 3Mix Bisquick, milk, eggs and salt until smooth, then pour it over tuna mixture and cheese. Garnish with tomato slices. (A sprinkle of parsley flakes looks nice, too.)

Step 4Bake for 25 - 30 minutes until knife inserted in center comes out clean. Let set for five minutes before you slice and serve. .A dollop of ranch dip is good as a topper.
