delightful irish meal reconstructed
Was trying to figure out what to make with all the leftovers from our corn beef and cabbage the Cabbage was gone but we still had potatoes, carrots, onions, and corned beef. Wanted to try something different so decided on a pot pie. Took it to work and finally got all the results back on whether they liked it or not it had good reviews.

Ingredients
- 2 - crust pie shell
- 2 cups red potatoes sliced ( or whatever is left)
- Onion - (whatever is left)
- 1 cup corn beef (diced)
- 1/2 cup carrots diced (or watever is left)
- 1 cup peas ( i used froze mostly for color)
- CHEESE SAUCE
- 1/4 cup butter
- 2 tablespoons flour
- 2 cups milk
- 1 cup provalone cheese
- 1/2 cup grated parmasan cheese
- - salt and pepper( to taste)

Step 1Dice and slice your vegtables and mix together.

Step 2Melt butter in sauce pan, add flour mix well add milk and whisk till thick.

Step 3Remove from heat add cheeses and stir until smooth. Let cool

Step 4When cool pour over vegetables. Pour into pie shell. Top with second pie shell, seal edges cut vents.Bake at 350 degrees for 45 minutes. Serve
