We're so lucky to have a vendor at our local indoor farmer's market who sells fresh pita as well as other Middle Eastern baked treats. This is one way to fill a pita!

Ingredients
- 2 pita breads
- 4 ounces turkey (deli sliced or leftover roasted)
- 4 large slices tomato (or equivalent smaller slices)
- 12 spinach leaves, stems removed or equivalent lettuce leaves
- 1 avocado, seed removed and sliced
- 1-2 teaspoon mayonnaise or mustard, or both
- 1 green onion, sliced
