I just love bacon and garden fresh tomato sandwiches. There is nothing like it - it just screams summer time! This sandwich is sweet, spicy, and savory, with of course - garden fresh Better Boy tomato slices. The pickled onion rings add an unusual twist and are totally worth the time. You can snack on them while you are working on your sandwich - just make sure you save enough for the sandwich!

Ingredients For the baconator grilled cheese sandwich

  • FOR THE BACON:
  • 5 slice
    thick sliced hicory smoked bacon
  • orange blossom honey
  • 1 tsp
    morton's hot chipotle salt
  • FOR THE SANDWICH SAUCE:
  • 1/2 c
    mayonnaise
  • 1 tsp
    sriracha sauce
  • 1 tsp
    ketchup
  • 1/2 tsp
    lemon juice
  • 1/2 tsp
    honey
  • 1/4 tsp
    worcestershire sauce
  • 1/4 tsp
    horseradish sauce
  • 1/8 tsp
    each garlic powder, ancho chili powder, dried dill, dried oregano, onion powder
  • salt and pepper to taste
  • THE OTHER SANDWICH INGREDIENTS:
  • 4 slice
    good quality bread - i chose sourdough
  • 2 Tbsp
    butter, salted and at room temperature
  • 1
    tomato, fresh from the garden is best
  • 2
    romaine lettuce leaves torn
  • 1
    avocado, peeled and sliced
  • 2 slice
    pepperjack cheese

How To Make the baconator grilled cheese sandwich

    In a container add all ingredients for the sauce.

    Stir well to combine. Taste for salt and pepper. Refrigerate covered until ready to assemble sandwich. Just a note - this sauce is so good it could be used as a dip for veggies, or on burgers, and other sandwiches.

    On an aluminum foil cover baking sheet place bacon. Drizzle honey over the baking and spread evenly. Sprinkle hot salt over bacon. I know it may seem odd to put salt on bacon, but the Morton Hot Salt has more heat than salt flavor.

    Bake at 350 until bacon is to your liking. I like it done but not too crispy.

    When bacon is done - remove and cover to keep warm.

    Heat your griddle pan on medium heat. Butter bread on both sides and place on griddle. Flip and grill the other side. Place a slice of pepperjack on 2 of the slices.

    Remove and place on work surface. On the other 2 slices - spread sauce generously.

    Add the rest of the sandwich ingredients evenly over the the grilled bread and assemble - bacon, onion ring, tomato, and lettuce.
