texas beef on texas toast
A friend gave me this recipe from an old Marlboro Cookbook, but I altered it to make it my own. It is very good.

Ingredients
- 1 - red or green bell pepper (i got both, plus either orange or yellow since i omitted the tomato)
- 1 - ripe tomato (i like mine still orangish and firm) (i omitted)
- 2 tablespoons olive oil
- 1 teaspoon dijon mustard (i used whole grain mustard)
- 1 tablespoon chopped parsley, optional
- 3-4 tablespoons soft butter or margarine
- dash cajun seasoning (originally said cayenne, but i prefer this and it does contain cayenne)
- 1 clove garlic, crushed (i added more, the minced from the fridge)
- 8 - thick slices white bread
- 1 pound cooked roast beef, sliced
How To Make texas beef on texas toast

Step 1Chop or slice peppers into big pieces, if using tomato, slice it as well. Cook all in olive oil. Stir in mustard and parsley. Combine butter, garlic and Cajun seasoning. Spread on bread and broil. Place beef on bread, top with pepper mixture and a second piece of toast.
