super easy pulled pork - slow cooker

I was having company and couldn't decide what to make for lunch - then I remembered I had a Mesquite Pork Loin in the freezer. Usually I put a rub on my pork loin before making pulled pork, but hoped it would work without extra spices, etc. And it did! Just have to remember to start it early enough!

Ingredients

  • 1 1/2 pounds mesquite seasoned pork loin (approximate size)
  • 12 ounces beer, favorite
  • 1 onion, coarsely chopped
  • barbecue sauce, sliced pickles, coleslaw, buns, to serve (optional)

How To Make super easy pulled pork - slow cooker

  • Step 1
    Chop onions and cover bottom of crock pot with them.
  • Step 2
    Unwrap pork roast, place on top of onions. Pour beer over all. Close crock pot and set on Low. Cook overnight or about 8 hours.
  • Step 3
    Remove pork to platter, use forks to shred. Drain liquid from crock pot, reserve about 2 cups. Return pork to pot, mix with cooked onions. Season to taste. Keep set to Warm until ready to serve.
  • Step 4
    Optional: Serve on bun. Top with a squirt of favorite BBQ sauce, pickles, coleslaw - as desired!
