Ingredients

  • MARINADE
  • 1 cup buttermilk
  • 1 tablespoon sriracha
  • 1 teaspoon each salt, pepper and garlic powder
  • DREDGING MIXTURE
  • 1 dash flour
  • 3 tablespoons cornstarch
  • 1 tablespoon paprika powder
  • 1 teaspoon each salt, cayenne pepper and garlic powder
  • SPICY MAYO
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha
  • SANDWICH
  • 4 boneless skinless chicken thighs pounded to even thickness
  • 4 hamburger buns
  • 4 slices pepper jack cheese
  • 8 sliced dill pickles
  • oil for deep frying

How To Make spicy chicken sandwich

  • Step 1
    Mix the marinade ingredients together and add the chicken. Let marinate overnight or at least 4 hours.
  • Step 2
    Mix the Sriracha and mayo together and set aside.
  • Step 3
    Heat the oil to 325 degrees. Mix the dredge ingredients together. Dredge the chicken pieces in the flour mixture then deep fry about 5 minutes each piece.
  • Step 4
    Assemble the sandwhich by spreading the mayo on the top. Place the cheese on the bottom and lay the hot chicken on top of the cheese. Top with pickles and enjoy
