THE CHICKEN FRIED STEAK
flour, all purpose variety
black pepper, freshly ground
salt, kosher variety
milk, or buttermilk
peanut oil, enough to fill a skillet 1/2 inch (1.3cm) in depth.
sourdough bread, lightly toasted
lettuce, for garnish, or a bed of coleslaw
sliced tomatoes, for garnish
pickles for garnish, i like good tangy dills.
mayonnaise, or your favorite mustard or sauce
3Gather your ingredients.
4Place the milk, or buttermilk, in a shallow bowl, and add the steak.
5Allow to rest in the fridge for 30 minutes.
6Meanwhile, add the flour, garlic powder, paprika black pepper, cayenne, and salt to a shallow bowl, and combine.
7Add the beaten egg to another shallow bowl.
8Remove the steak from the milk, or buttermilk, shake off any excess, and coat in the flour mixture.
9Shake away any excess flour, and dip in the egg mixture.
10Shake away any excess egg, and coat a second time in the flour.
11Place the steak on a wire rack, and allow it to rest for 15 minutes.
12Chef’s Note: This will help dry out the crust and make it nice and crispy.
13Add 1/2-inch (1.3cm) of peanut oil to a skillet, over medium heat.
14When the oil reaches 350f (175c), add the steak, and cook until nice and brown on both sides, about 2 minutes per side.
16Add your favorite sauce, mayo, or whatever you like to one side of each piece of bread.
17Chef's Note: This is my favorite sauce:
18Lay down a bed of lettuce.
19Add the chicken-fried steak.
20Add the sliced tomatoes.
21Top with the other piece of bread.
23Cut in half, and serve with your favorite side. Enjoy.
24Keep the faith, and keep cooking.
