Ingredients
- PICKLE AIOLI
- 1 cup mayonnaise
- 1 clove garlic, minced
- 1 small shallot, chopped
- 1/2 cup drained dill pickle slices
- SPICED SALMON
- 2 teaspoons smoked paprika
- 1 teaspoon chipotle chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 2 teaspoons wondra flour
- 2 skinless salmon filets (4 oz each)
- 2 tablespoons olive oil
- FOR SERVING
- 2 hoagie buns, split and toasted
- 1/2 cup microgreens
How To Make spiced salmon sandwich with pickle aioli

Step 1To make the aioli, place the ingredients in a food processor and process until well blended. Set aside in fridge to meld flavors.

Step 2To make the salmon, mix the spices together with the flour. Rub all over the salmon and let sit at room temperature for 30 minutes.

Step 3Add oil to a cast iron skillet. once shimmering, add the salmon and cook undisturbed for 6 minutes. Turn and cook on the other side for 5 more minutes. All depending on how thick your salmon is.

Step 4Spread aioli on the top bun of sandwich. Top with microgreens and place the fish on the bottom bun and put it together. Enjoy.
