This is a very easy but elegant luncheon dish, and it is also wonderful for a light summer dinner served with fresh fruit and a glass of buttery Chardonnay! (Or any other white wine you enjoy.)

Ingredients For seattle special croissants

  • 2
    large eggs, hard boiled
  • 1 lb
    large shrimp, peeled, deveined, tails removed, leaving tails on 4 for garnish
  • 1 Tbsp
    olive oil
  • 1 lg
    avacado
  • 2/3 c
    mayonnaise
  • 2 Tbsp
    chili sauce, such as heinz (or bottled seafood sauce)
  • 2 Tbsp
    green onions, chopped
  • 2 tsp
    worcestershire sauce
  • 2 tsp
    red wine vinegar
  • salt and pepper, to taste
  • 1/2 c
    toasted sliced almonds
  • 4 lg
    croissants
  • lettuce leaves
  • lemon wedges, to serve.

How To Make seattle special croissants

    Add olive oil to skillet and heat until shimmering. Sprinkle shrimp with salt and pepper and add them to the hot oil and quickly saute, stirring, 1-2 minutes per side Until just opaque and cooked through.

    Remove shrimp with slotted spoon to a plate and set aside to cool.

    When shrimp have cooled, save 4 for garnish and dice the rest.

    Dice eggs and avacado.

    In a bowl mix together mayonnaise, chili sauce, green onions, Worcestershire and red wine vinegar.

    Fold in avacado, shrimp, eggs and toasted almonds. Adjust seasoning to taste.

    Slice each croissant horizontally in half. Place lettuce leaves on bottom halves, top with shrimp mixture, replace top halves. Garnish each sandwich with shrimp.

    Serve with lemon wedges.
