salmon salad sandwich w/cucumber, spinach & tomato

I created this sandwich recipe for the Ready, Set, Cook! game that we play on another site that I frequent. The garden produce adds a refreshing crisp touch and a fresh taste to the salmon salad base of this sandwich. The great thing about this recipe is, you can adjust the ingredients to suit your taste buds. For example, try adding a bit of sliced bell peppers for a zesty kick, or switch the bread to your favorite burger bun.

Ingredients

  • 8 slices - bread (i used buttermilk bread, but nearly any bread or bun will work ok)
  • - unsalted butter (to butter the bread) - optional
  • 1 (15-oz) can pink salmon or smoked salmon (skin and bones removed)
  • 2 tablespoons mayonnaise
  • 1 to 2 dashes hot sauce (optional)
  • 2 teaspoons italian seasoning
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 medium tomato, sliced into thin rings
  • 1 medium red onion, sliced into thin rings
  • 1 medium cucumber, peeled
  • 16 to 20 - spinach leaves, rinsed and dried
  • 4 slices mozzarella cheese (havarti cheese works ok, too)

How To Make salmon salad sandwich w/cucumber, spinach & tomato

  • Step 1
    Peel cucumber. Slice each cucumber half into thin slices about 1/8-inch thick and about 3 inches in length. Set aside.
  • Step 2
    Butter one side of each slice of bread; set aside.
  • Step 3
    Drain liquid from salmon. Then place drained salmon in a medium-size mixing bowl (be sure to remove skin and bones). Add mayonnaise, hot sauce (if using), Italian Seasoning, salt and pepper, and stir with a fork until well combined.
  • Step 4
    Place some of the salmon mixture on top of slice of bread. Place 1 or 2 tomato slices over the salmon mixture. Top with an onion slice, 2 thin cucumber slices, 4 to 5 spinach leaves and a slice of cheese. Top with other slice of bread. Repeat until you've prepared all 4 sandwiches.
  • Step 5
    Cut each sandwich if half, and place sandwich on individual serving plates. Serve with potato chips, bagel chips, potato salad, or sliced fruit. Serve immediately.
