Ingredients
- 2 tablespoons olive oil
- 2 medium buttom cremini mushroom sliced
- salt
- 1 medium onion sliced
- 2 slices bread
- 1/2 cup aged cheddar cheese shredded
- 1/4 cup spinach leaves
- butter
- JALAPENO AIOLI
- 1 1/2 tablespoons mayonnaise
- clove garlic minced
- 1 tablespoon seeded chopped jalapeno pepper
- pinch of salt
How To Make roasted mushroom grilled cheese w jalapeno aioli

Step 1Preheat oven 425 degrees. Place the mushrooms on a baking sheet. Drizzle with olive oil and sprinkle with salt. Place in oven and roast until all moisture has been given off and mushrooms are browned about 15 minutes.

Step 2Mix all the ingredients for the Aioli together and set aside.

Step 3Add the remaining olive oil to skillet and saute the onion until it is browned and caramelized.

Step 4Spread the Aioli on both slices of bread. Top with onions, cheese, mushrooms and arugula. Place the two pieces together to make a sandwich.

Step 5In the same pan you used for the onions. Add a little butter then bring heat to medium high. Butter one side of the sandwich then place butter side down in pan. Butter the other side of the sandwich. Cook until browned on both sides. Serve immediately
