This is so good. You can't even tell that there is cauliflower in there. You may be able to even fool a kid. Delish

Ingredients

  • 1 medium onion sliced
  • 3 tablespoons olive oil
  • 1 large cauliflower floret sliced flat about 3/8 inch thick
  • salt
  • 2 slices bread
  • 1/2 cup mature aged cheddar cheese shredded
  • 1/4 cup favorite greens ie arugula
  • butter
  • AIOLI
  • 1 1/2 tablespoons mayonnaise
  • 2 teaspoons seeded and minced jalapeno pepper
  • 1/2 clove garlic minced
  • pinch of salt

How To Make roasted cauliflower grilled cheese wjalapeno aioli

  • Step 1
    Preheat oven 425 degrees Mix the ingredient together for the Aioli and set aside.
  • Step 2
    Place the cauliflower on a baking sheet. drizzle with olive oil and sprinkle salt. Roast for 10 minutes then flip and roast another 5 minutes.
  • Step 3
    Meanwhile add remaining olive oil to a skillet and add the onion. Cook the onion until browned and caramelized.
  • Step 4
    Lay your bread out and spread the Ailoi on both pieces. Add the onions, Cheese, cauliflower, and greens. Close the sandwich.
  • Step 5
    Turn the heat back on the same pan you used for the onions. Butter one side of the sandwich and put butter side down in skillet. Butter the remaining side. Cook until browned and then flip and press down and cook until browned on other side. Serve
