paul's chicken salad
It always surprises me how something so simple can make such a big impression. I made this for my dad to take to work for a pot luck and everyone was asking for the recipe. Awesome on a sandwich or served in a bed of lettuce.

Makes 6-8 good sized sandwiches
Ingredients
- 3 - chicken breasts, cooked and shredded
- 1 - onion, chopped
- 1/2 cup - dill pickles, chopped
- 2 cloves - garlic, minced
- 1 - jalapeño, seeded and minced
- 1/2 cup - mayonnaise
- 1 tablespoon dried dill weed
How To Make paul's chicken salad

Step 1Combine all ingredients in a large bowl and mix well.

Step 2Place in fridge for an hour or so to allow it to tighten up a bit before serving.

Step 3Add salt and pepper to taste.
