It always surprises me how something so simple can make such a big impression. I made this for my dad to take to work for a pot luck and everyone was asking for the recipe. Awesome on a sandwich or served in a bed of lettuce.

Ingredients

    chicken breasts, cooked and shredded
  • 1
    onion, chopped
  • 1/2 cup
    dill pickles, chopped
  • 2 cloves
    garlic, minced
  • 1
    jalapeƱo, seeded and minced
  • 1/2 cup
    mayonnaise
  • 1 Tbsp
    dried dill weed

How to Make Paul's Chicken Salad

Step-by-Step

  1. Combine all ingredients in a large bowl and mix well.
  2. Place in fridge for an hour or so to allow it to tighten up a bit before serving.
  3. Add salt and pepper to taste.
