Ingredients
- 2 large chicken breasts, grilled and sliced
- 4 slices bacon, cooked
- 1/2 cup chipotle mayo, or more to taste
- 4 submarine sandwich rolls, ciabatta or italian rolls
- 2/3 cup fresh guacamole
- 1/2 cup shredded cheese of your choice (i use mexicana and habañero mixed together)
- 1-2 large fresh ripe tomatoes, sliced
- freshly ground black pepper, to taste (i always use mixed peppercorns)
- 1/2 large lime, freshly squeezed

Step 1In a small bowl, mix mayo and chipotle puréed; set aside. Preheat grill; season chicken with pepper. Cook over medium for 5 to 7 minutes per side or until cooked through; slice chicken thinly and sprinkle fresh lime juice over top.

Step 2Spread chipotle mayo on bottom half of each roll and top with sliced chicken, bacon, *Guacamole, cheese and sliced tomato. Serve with salad or coleslaw.
