mexican chicken sandwich
this is one of my favorite things to make for my husband. He never refuses this as a dinner or lunch. It is also easily doubled. It can be done on the bbq as well....all steps!! If you like hot...pepper jack cheese,sliced jalepeno pepper...or just change your heat on spices like a touch of cayenne and hotter salsa...hope you enjoy!!!!

Ingredients
- 8 ounces chicken breast halves, skinless and boneless
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder1
- 1/2 teaspoon goya adobo or sazon
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 - crusty rolls,sliced
- 1/2 cup chedddar or jack cheese,shredded
How To Make mexican chicken sandwich

Step 1slice chicken into strips or pound into 2 thin portions

Step 2season with spices

Step 3medium high temp.heat skillet and use no stick vegetable spray

Step 4brown on both sides approx 5 mins per side. if you cut into strips do at least a total of 10 mins stirring a bit but be sure and let the chicken get some nice brown color. cover the pan ; turn heat to low while doing next step

Step 5place rolls on cookie sheet;open to lay flat cut side up; divide cheese and sprinkle over both halves of each roll.....actually i probably go a bit more with cheese. ha!!!

Step 6place in a preheated oven 375 . melt cheese on roll...should only take about 10mins

Step 7assemble sandwich...pile on chicken...optional garnishes sour cream and your favorite chunky salsa....lots of napkins..enjoy!!!!!!
