This is North African inspired and can be either lunch or dinner depending on what you choose to have with it. You can also serve the chicken patties with couscous tossed with golden raisins or apricots and no pita.

Ingredients
- 2 - (6-inch) pitas, cut in half
- 2 tablespoons chopped green onions
- 1/2 tablespoon ras el hanout seasoning (purchased or homemade)
- 1/4 teaspoon coarsely ground black pepper
- 1 large egg white, lightly beaten
- 1/2 pound ground chicken
- 1 tube grated lemon rind, divided
- 1/2 tablespoon olive oil
- 1/4 cup plain fat free yogurt
- 3/4 teaspoon chopped fresh cilantro
- 2 - (6-inch) pitas, cut in half
- 1 cup shredded lettuce
- 1/4 cup diced tomato or more if you like

Step 1Combine first 6 ingredients; add 1/2 teaspoon rind, stirring well. Divide mixture into 4 equal portions, shaping each into 1/4-inch-thick oval patties.

Step 2Heat oil in a large nonstick skillet over medium-high heat. Add patties; cook 2 minutes on each side or until browned. Cover, reduce heat to medium, and cook 4 minutes

Step 3Combine remaining 1/2 teaspoon rind, yogurt, and cilantro, stirring well. Fill each pita half with 1 patty, equal portions yogurt mixture, 1/4 cup lettuce, and 1 tablespoon tomato.
