The original Hot Brown was created at the Louisville Brown Hotel early this century. There are many variations, most commonly with country ham and a cheddar sauce. This version is closer to the original version.

Ingredients For kentucky hot brown (for 1)

  • 3 oz
    turkey breast, roasted and sliced
  • 1 slice
    white bread, toasted
  • 2 slice
    tomato
  • 2 slice
    bacon, cooked and drained
  • SAUCE:
  • 2 oz
    butter
  • 3 oz
    flour
  • 3/4 c
    cream
  • 1/4 c
    milk
  • 1/2 c
    swiss cheese, grated
  • salt, to taste
  • freshly ground white pepper, to taste

How To Make kentucky hot brown (for 1)

    Sauce: Heat butter and add flour. Whisk and slowly cook for 5 minutes. Whisk in cream and milk; heat. Whisk in cheese until melted. Season. Simmer for 30 minutes. Sauce should be very thick.

    Quarter toast and place in oven-safe dish. Top with turkey and tomatoes. Cover well with sauce. Bake at 400 degrees F for 10 minutes. Garnish with bacon.
