This is an easy and fun way to serve Meatball Subs.... It is not as messy either! All the flavors and joy of a good Meatball Sub, but serving in a easier to make and eat way... Even the littlest children love this!

I developed this recipe to serve for a sporting event... had everything ready and let the adults help the children and themselves! It was a big hit! Not one child said, "Oops! My meatball fell out!"

How to Make Inside Out Meatball Subs!

Step-by-Step

  • 1Put frozen (or thawed) meatballs in a large skillet. Brown well.
  • 2Add onion, celery and bell pepper. Cook about 3 minutes.
  • 3Add the eggplant, cook about 5 minutes, stirring constantly.
  • 4Add the sauce, diced tomatoes, garlic and spices. Simmer about 15 minutes, stirring. The sauce will thicken and get darker and richer.
