inside out meatball subs!
This is an easy and fun way to serve Meatball Subs.... It is not as messy either! All the flavors and joy of a good Meatball Sub, but serving in a easier to make and eat way... Even the littlest children love this! I developed this recipe to serve for a sporting event... had everything ready and let the adults help the children and themselves! It was a big hit! Not one child said, "Oops! My meatball fell out!" Play with your food! xo

Ingredients
- MEATBALLS
- 2 bags frozen meatballs
- SAUCE
- 1 medium onion (chopped)
- 1 medium bell pepper (chopped)
- 2 sticks celery (chopped)
- 1 large eggplant (chopped)
- 3 jars pasta sauce of choice
- 1 can diced tomatoes
- 1 tablespoon basil (dried or fresh)
- 1 tablespoon garlic (minced fine)
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- BREAD
- 1 large french bread (sliced)
- TOPPING
- 2 cups mozzarella cheese (shredded)
How To Make inside out meatball subs!

Step 1Put frozen (or thawed) meatballs in a large skillet. Brown well.

Step 2Add onion, celery and bell pepper. Cook about 3 minutes.

Step 3Add the eggplant, cook about 5 minutes, stirring constantly.

Step 4Add the sauce, diced tomatoes, garlic and spices. Simmer about 15 minutes, stirring. The sauce will thicken and get darker and richer.

Step 5Place desired amount of slices of bread on an angle in a serving bowl (we use 1 to 3 slices).

Step 6Scoop some sauce and meatballs into center of bowl.

Step 7Top with Mozzarella Cheese. Serve!
