Grilled Brie and Baby Spinach Sandwiches

I found this in a cookbook put out by Costco®. It sounded like a great combination of ingredients and reminded me of rustic French-Canadian cuisine.

1 Tbsp
extra-virgin olive oil
1 clove
garlic, minced
1 bag(s)
spinach (16 oz)
2 Tbsp
butter (or margarine)
8 slice
hearty whole grain bread
2 Tbsp
apricot jam (plum, chokecherry, etc.)
8 oz
brie cheese, sliced

How to Make Grilled Brie and Baby Spinach Sandwiches


  • 1Heat oil in medium skillet. Saute garlic briefly. Add spinach and cook until it wilts slightly. Set aside.
  • 2Melt butter in large skillet over medium heat. grill bread slices on one side until evenly brown.
  • 3Spread jam on un-browned side of 4 slices. Top each with 2 slices of Brie and a large spoonful of spinach. Cover with remaining bread slices, grilled side up.
  • 4Slice sandwiches in half to serve.
