grilled brie and baby spinach sandwiches

I found this in a cookbook put out by Costco®. It sounded like a great combination of ingredients and reminded me of rustic French-Canadian cuisine.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 bag spinach (16 oz)
  • 2 tablespoons butter (or margarine)
  • 8 slices hearty whole grain bread
  • 2 tablespoons apricot jam (plum, chokecherry, etc.)
  • 8 ounces brie cheese, sliced

How To Make grilled brie and baby spinach sandwiches

  • Step 1
    Heat oil in medium skillet. Saute garlic briefly. Add spinach and cook until it wilts slightly. Set aside.
  • Step 2
    Melt butter in large skillet over medium heat. grill bread slices on one side until evenly brown.
  • Step 3
    Spread jam on un-browned side of 4 slices. Top each with 2 slices of Brie and a large spoonful of spinach. Cover with remaining bread slices, grilled side up.
  • Step 4
    Slice sandwiches in half to serve.
