grilled brie and baby spinach sandwiches
I found this in a cookbook put out by Costco®. It sounded like a great combination of ingredients and reminded me of rustic French-Canadian cuisine.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 clove garlic, minced
- 1 bag spinach (16 oz)
- 2 tablespoons butter (or margarine)
- 8 slices hearty whole grain bread
- 2 tablespoons apricot jam (plum, chokecherry, etc.)
- 8 ounces brie cheese, sliced
How To Make grilled brie and baby spinach sandwiches

Step 1Heat oil in medium skillet. Saute garlic briefly. Add spinach and cook until it wilts slightly. Set aside.

Step 2Melt butter in large skillet over medium heat. grill bread slices on one side until evenly brown.

Step 3Spread jam on un-browned side of 4 slices. Top each with 2 slices of Brie and a large spoonful of spinach. Cover with remaining bread slices, grilled side up.

Step 4Slice sandwiches in half to serve.
