Grilled Brie and Baby Spinach Sandwiches

I found this in a cookbook put out by Costco®. It sounded like a great combination of ingredients and reminded me of rustic French-Canadian cuisine.

  • 1 Tbsp
    extra-virgin olive oil
  • 1 clove
    garlic, minced
  • 1 bag(s)
    spinach (16 oz)
  • 2 Tbsp
    butter (or margarine)
  • 8 slice
    hearty whole grain bread
  • 2 Tbsp
    apricot jam (plum, chokecherry, etc.)
  • 8 oz
    brie cheese, sliced

How to Make Grilled Brie and Baby Spinach Sandwiches


  1. Heat oil in medium skillet. Saute garlic briefly. Add spinach and cook until it wilts slightly. Set aside.
  2. Melt butter in large skillet over medium heat. grill bread slices on one side until evenly brown.
  3. Spread jam on un-browned side of 4 slices. Top each with 2 slices of Brie and a large spoonful of spinach. Cover with remaining bread slices, grilled side up.
  4. Slice sandwiches in half to serve.
