Grilled Brie and Baby Spinach Sandwiches
1 Tbspextra-virgin olive oil
1 clovegarlic, minced
1 bag(s)spinach (16 oz)
2 Tbspbutter (or margarine)
8 slicehearty whole grain bread
2 Tbspapricot jam (plum, chokecherry, etc.)
8 ozbrie cheese, sliced
How to Make Grilled Brie and Baby Spinach Sandwiches
- Heat oil in medium skillet. Saute garlic briefly. Add spinach and cook until it wilts slightly. Set aside.
- Melt butter in large skillet over medium heat. grill bread slices on one side until evenly brown.
- Spread jam on un-browned side of 4 slices. Top each with 2 slices of Brie and a large spoonful of spinach. Cover with remaining bread slices, grilled side up.
- Slice sandwiches in half to serve.
