This recipe comes from a group of dedicated Ladies from St. Mary's Greek Catholic Church, Manville, NJ where they used to make this to serve on top of the Hot Dogs every Friday for BINGO. My mother, Helen Semenick, used to be apart of this group of dedicated ladies who gave their time every week.

Ingredients
- 1 can sauerkraut
- 1 large onion chopped
- 1 tablespoon bacon grease
- 2 bay leaves
- 1 teaspoon caraway seeds
- 2 tablespoons dark brown sugar
- salt & pepper
How To Make flavorful sauerkraut for hot dogs or kielbasy

Step 1In a large pot, saute onionbs in bacon grease. Rinse sauerkraut in cold water and drain well.

Step 2Add sauerkraut and 1 cup water to sauted onions. Add the rest of ingredients and simmer for 1 hour.

Step 3Add more water and sugar as needed for flavor. Stir occasionally.

Step 4For the Hot Dogs-this is best served with spicey mustard and raw chopped onions. For the Kielbasy-cook the kielbasy, slice it and mix with the sauerkraut and put in a large covered casserole before serving.
