CHEAP CHEAP ANYTHING is GREAT! This hot chicken bread is so fast, easy and CHEAP to make. (I am all about CHEAP GREAT TASTING FOOD) I am a true Econo-Mom! Ground chicken is one of those foods that people just seem to pass on up in the meat section BUT it really is so versatile and flavorful (and cheap) if you know how to dress it up! The mayo keeps the ground chicken from being Dry and Sawdusty. Pair this with a mixed greens salad or a good light soup and dinner is ON!

Ingredients

  • 1
    loaf ciabatta bread (cut in half length wise) you can use any loaf style bread of your choice
  • 3 Tbsp
    butter, melted
  • 2-3 Tbsp
    olive oil or oil of choice
  • 1 lb
    ground chicken
  • 4
    green onions diced
  • 1/2 c
    mayonnaise ( always use a good mayo i use dukes it makes a huge difference in your flavor)
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    thyme
  • 1/4 c
    shredded parmesan
  • 1 c
    shredded swiss cheese divided
  • ·
    fresh parsley roughly chopped or dried flakes (optional)

How to Make Cheep Cheep Chicken.......Ciabatta

Step-by-Step

  1. Set oven to Broil.
  2. Slice Ciabatta length ways and brush with melted butter. Place under broiler until butter and bread start turning brown and toasty. Remove and set aside. (I make all my breads homemade so the Ciabatta in the pictures look different because they are my homemade loaves I made fresh this morning) If anyone would like my recipe for Ciabatta Bread please just let me know :}
  3. MY HOMEMADE CIABATTA BREAD SUPER YUMMY :}
  4. Turn oven temperature to 400 degree
  5. In a skillet on medium heat add olive oil when oil is hot add ground chicken and break up - cook until half done and add green onions, garlic, thyme, salt and pepper. Cook chicken until done.
  6. Remove to bowl and add mayo, parmesan and half the swiss cheese. Fold to combine.
  7. Spread mixture onto the toasted Ciabatta and top with remaining swiss cheese.
  8. Place bread topped with chicken mixture on a baking sheet and bake in 400 degree oven for 10 to 15 minutes or until cheese is nice and bubbly.
  9. Remove from oven and cut into serving size pieces. I serve this bread bake with soup in the winter months and nice mixed greens salad in the summer months.
  10. Here is a super neat trick for Green Onions:

    Cut green tops off and use them. But save the white ends (about 4 inches leave the roots on. Stick them into a jar of water and place in a sunny spot in your kitchen and the tops will regrow with in 6 to 7 days and you have fresh green onion tops or chives whenever you want them!! I do this all year long :)

    Just snip off what you need and they will grow back again. Change water about every 7 days and keep them chives growing!!!
  11. Step one for fresh chives: Cut green tops off and leave the white and roots. You should have about 3-4 inches of onion left with the roots still on.
  12. Step 2: Place onion roots into a container where the tops can stick up out of it. Add enough water to cover half way up the root stalk
  13. Step 3: Stick in window and watch them grow back this will take about 7 days.
  14. And Whaaaaaa Laaaaaaaaaaaa Fresh Chives :} Cut green tops and replace back into window and watch them grow again!
