Ingredients
- 1/2 cup mascarpone cheese at room temp
- 1/4 cup olive oil
- 1 tablespoon fresh tarragon leaves chopped
- 2 tablespoons fresh chives chopped
- zest of 1 lemon
- 1 teaspoon lemon juice
- 2 cloves garlic minced
- salt and pepper
- 1/2 pound cooked lobster meat
- 4 brioche buns
How To Make brioche lobster rolls

Step 1Cook the lobster in butter or boiling water and set aside in fridge to cool.

Step 2Combine the Mascarpone cheese and olive oil until smooth. Stir in the tarragon, chives, lemon zest and juice, garlic, salt and pepper.

Step 3Cut the lobster into big chunks. Add the lobster to the mascarpone mixture and mix well. Serve on the brioche buns.
