Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup white mushrooms thinly sliced
  • 1 small shallot minced
  • 1/2 teaspoon dried thyme
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon red wine vinegar
  • salt and pepper to taste
  • 1 cup shredded fontina cheese
  • 4 slices bread of choice
  • butter

How To Make balsamic mushrooms & fontina grilled cheese sammie

  • Step 1
    Add the butter and oil in a large skillet. Add the mushrooms, shallots, & thyme. Cook until mushrooms have given up their moisture. Add the vinegars and cook until the liquid has evaporated. Season with salt and pepper
  • Step 2
    Remove the mushrooms from the skillet. Wipe out the skillet. Butter each slide of bread. on one side. Place 2 slices the butter side down in the pan over med heat. Top with mushroom, & cheese and the other slice of bread butter side up.
  • Step 3
    When the bread is browned on one side. Flip to the other side pressing down and cook until cheese is melted. Serve
