This recipe is from Southern Living Christmas Cookbook 2008. I have made for dinner parties and our guests love it.

Ingredients

  • 1 can 16 oz. whole berry cranberry sauce
  • 1 teaspoon grated fresh orange rind
  • 2/3 cup fresh orange juice
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon ground pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1 1/2 pounds pork tenderloin
  • 1 1/2 tablespoons olive oil

How To Make orange-cranberry glazed pork tenderloin

  • Step 1
    Bring first 9 ingredients to a boil over medium heat. Reduce heat and simmer, stirring occasionally 20 minutes.
  • Step 2
    Season pork with salt & pepper & rosemary. Brown pork in hot oil in a large nonstick skillet over medium high heat 3 minutes on each side until golden brown. Place pork in a lightly greased shallow roasting pan.
  • Step 3
    Bake at 425 degrees for 15 - 25 minutes or until meat thermometer inserted into thickest portion registers 155 degrees. Remove pork from oven and cover with aluminum foil; let stand 5 minutes until thermometer registers 160 degrees.
  • Step 4
    Slice pork and serve with cranberry sauce mixture.
