elaine's tender moist pork loin
This is a combination of a couple of recipes that I like. The result is a fork-tender, moist and delicious roast. The pan drippings make a beautifully seasoned gravy. There are very tasty pan drippings with little fat. All it needs is a thickener (a bit of flour) and some water. Serve with pan roasted potatoes and your choice of vegetables.

Ingredients
- 3 pounds boneless pork loin roast
- 1 1/2 teaspoons kosher salt
- 3/4 teaspoon fresh ground pepper
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons cumin
- 1 1/2 teaspoons chili pepper
How To Make elaine's tender moist pork loin

Step 1Combine spices in a large zip top plastic bag.

Step 2Put pork roast into the bag. Shake the bag to coat the roast.

Step 3Seal and refrigerate for up to 24 hours.

Step 4Remove roast from fridge and allow to come to room temperature.

Step 5Oil a large pan and heat. Brown the roast on all sides until golden.

Step 6Put the pan with the roast into a 350 F degree oven. Roast for about 1 hour or to an internal temperature of 135 F degrees,

Step 7Remove from oven, cover and let sit for 30 to 45 minutes. Carve against grain in thin slices.
