easy pot roast
This is my first shot at posting a recipe. I learned the trick of using onion soup mix from my mother-in-law. I never cared for roast until I had hers. She usually put potatoes in it, but I recently tried cauliflower as a healthier alternative. My husband, who is a potato fanatic, loved it. (although he did suggest I do both) The cauliflower comes out with such a great flavor, you don't even need gravy, but the broth makes an excellent gravy.

Ingredients
- 3-4 pounds beef roast-any
- 1 package onion soup mix
- 10 - baby carrots
- 1 - head cauliflower, cut into florets
- - water-enough to cover roast
How To Make easy pot roast

Step 1Sear ( to cook the surface of quickly with intense heat) roast on all sides.

Step 2Place seared roast in crock pot and sprinkle packet of onion soup mix over it.

Step 3Put enough water to just reach top of roast, without it floating.

Step 4Cook in crock pot 4-5 hours on medium or low setting. Add carrots at about the 3 hour mark. Put cauliflower florets in one hour before serving.
