I had a roast that needed to be cooked today and I was tired of the usual set of recipes I use. I decided to just look around the kitchen and use things I wouldn't normally use in a pot roast. It's a little bit sweet, a little savory and as easy as dumping it all into a slow cooker. I'm here writing it down tonight because hubby took two bites, said "is this new?" and then said go write it down so you don't forget!

Ingredients

  • 3 pounds beef roast
  • 1 - envelope onion soup mix
  • 3/4 cup dried cranberries (or prunes)
  • 1 - medium bell pepper, diced
  • 1/4 cup red wine vinegar
  • - 1 sprig fresh rosemary (1/2 tsp)
  • 3 - fresh roma tomatoes, peeled and diced
  • 1/3 cup pitted green olives
  • 1 tablespoon capers
  • 1/2 cup water
  • 4 - medium red potatoes, cut in large chunks
  • - salt and pepper

How To Make different pot roast

  • Step 1
    Place everything in a crockpot or slow cooker. Cover and cook on low for 8 hours or high for 6 hours. The meat should be fork tender.
