This recipe produces such a tender, moist, and flavorful pork roast that is quite fitting for company or special occasions. It takes like a fancy gourmet meal that took hours of labor to prepare to perfection, but it's actually quite simple with a few minutes of prep (cutting potatoes, etc), placing it all in a slow cooker, and letting it do all of the work. You can tie your pork loin roast yourself at home using common kitchen twine, or you can ask your butcher to roll and tie the roast in advance.

Ingredients
- 4 medium potatoes, peeled and cut into 1-inch chunks
- 1 teaspoon salt, or to taste
- 1 teaspoon black pepper, or to taste
- 3 pounds boneless, center-cut pork loin roast, rolled and tied
- 1 can whole-berry cranberry sauce (16 oz)
- 1 can apricot nectar (5.5 oz)
- 1 medium onion, coarsely chopped
- 1/2 cup dried apricots, coarsely chopped
- 1 tablespoon honey
- 1 teaspoon dry mustard (or mustard powder)
- 1/4 teaspoon crushed red pepper flakes
How To Make crock pot cranberry pork roast

Step 1Place potato chunks in a 3 1/2-quart (or larger) Crock Pot/slow cooker, arranging them so they cover the bottom as much as possible. Season potatoes with salt and pepper. Place pork over potatoes.

Step 2In a large bowl, stir remaining ingredients together (cranberry sauce, apricot nectar, chopped onion, chopped apricots, honey, mustard, and red pepper flakes). Pour the cranberry mixture over the pork roast.

Step 3Cover crock pot, and cook on Low heat setting for 6 hours (or on High heat for about 3 1/2 hours).

Step 4Transfer roast to cutting board, and cut into thin slices. Serve with the potatoes, and ladle sauce over the pork and potato servings.
