watermelon meatballs !

I liked the Fried Watermelon so much that I developed several other recipes using watermelon rind. No more wasting the watermelon rind! These Meatballs taste great!

yield depends how big you make them (I make 1 inch balls) about 100.

Ingredients

  • MEATBALL MIXTURE
  • 8 slices bread (crumbled fine)
  • 4 - eggs
  • 1/4 cup water
  • 3 pounds ground beef
  • 1 large onion (minced small)
  • 2 pounds bulk italian sausage
  • 1 tablespoon each: basil and oregano (both dried)
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon cayenne pepper
  • 2 - sleeves of saltine crackers (crushed well)
  • WATERMELON
  • 2 1/2 cups watermelon rind (prepared as described in ***notes)
  • 1 tablespoon olive oil
  • 1 tablespoon margarine

How To Make watermelon meatballs !

  • Step 1
    Watermelon Rind: Cut the day before, into 1/4 inch thick strips, then cut strips into 1/4 inch pieces. Soak in salt water over night. The next day: Rinse and drain well. Saute in 1 Tbs. olive oil and 1 Tbs. margarine. Cooking until very tender. Cool. Add to meatball mixture.
  • Step 2
    Mix all meatball ingredients together. Form into balls. Cook until done in skillet. (about 10 to 15 minutes).
  • Step 3
    Serve as you would any meatballs!
