Ingredients
- 2 1/4 pounds boneless top loin pork roast
- 1/3 cup finely chopped walnuts
- 1 tablespoon rosemary
- 1/2 cup merlot or dry red wine
- 1 tablespoon lemon juice
- 1 cup whole cranberry sauce
How To Make walnut encrusted pork roast

Step 1Oven to 325 degrees. Roast on rack in shallow baking pan. Combine nuts and rosemary and press on tops and sides of roast. Sprinkle with salt and pepper. Bake 1 1/4-1 1/2 hours or to an internal temp of 160 degrees and juice runs clear. Set before cutting. Combine remaining in small saucepan, bring to boil and reduce heat. Boil, uncovered 15 min until sauce reduces to 1 cup. Cool 15 min. Slice roast thin and serve with sauce.
