Ingredients
- 2 pounds pork belly cut into chunks
- 4 hard-boiled eggs
- 1 teaspoon sugar
- 1 medium shallot, minced
- 6 cloves garlic, minced
- 2 cans coconut soda (12 oz each, like Goya coconut soda
- 2 tablespoons fish sauce
- 2 scallions, chopped
- chili crisp, for garnish to taste

Step 1In a Dutch oven over low heat, add the sugar, stir, and brown until caramelized, about 5 minutes.

Step 2Add the pork belly cubes and brown on all sides. Add the shallot and garlic and cook 3 minutes.

Step 3Pour in the coconut soda and fish sauce. Add water if the pork isn't completely covered. Place a lid on the Dutch oven and simmer for an hour.

Step 4Remove the lid and add the boiled eggs. Leave the cover off the Dutch oven and roll the eggs around for about 15 more minutes to reduce the sauce.

Step 5Serve over rice and garnish with scallions and chili crisp.
