    pork belly cut into chunks
  • 4
    hard-boiled eggs
  • 1 tsp
    sugar
  • 1 md
    shallot, minced
  • 6 clove
    garlic, minced
  • 2 can
    coconut soda (12 oz each, like Goya coconut soda
  • 2 Tbsp
    fish sauce
  • 2
    scallions, chopped
  • chili crisp, for garnish to taste

How To Make vietnamese braised pork belly and eggs

    In a Dutch oven over low heat, add the sugar, stir, and brown until caramelized, about 5 minutes.

    Add the pork belly cubes and brown on all sides. Add the shallot and garlic and cook 3 minutes.

    Pour in the coconut soda and fish sauce. Add water if the pork isn't completely covered. Place a lid on the Dutch oven and simmer for an hour.

    Remove the lid and add the boiled eggs. Leave the cover off the Dutch oven and roll the eggs around for about 15 more minutes to reduce the sauce.

    Serve over rice and garnish with scallions and chili crisp.
