tortellini soup

This is my favorite soup. Great soup for those cold days. It warms your body and soul! Great as leftover reheated if you are lucky enough to have any!

Ingredients

  • 1 pound italian sasage mild
  • 64 ounces chicken stock
  • 15 ounces petite cut tomatoes
  • 1 large onion chopped
  • 1 tablespoon minced garlic
  • 1 large carrot sliced thin
  • 2 cups broccoli, frozen
  • 1 bag kale or spinach, fresh
  • 1 package cheese tortellini
  • - salt and pepper to taste

How To Make tortellini soup

  • Step 1
    Remove skins from sausages and brown crumbling as you go in a large stock pot. Drain excess fat.
  • Step 2
    While sausage is browning Chop and measure vegetables. Add to sausage pot: Chicken Stock, water, tomatoes,onion, garlic, carrots and frozen broccoli to the pot and cook until vegetables are tender with fork test. Note: I have done this portion in a crock pot so it would be ready to finish up when we get home. Your house will smell wonderful!
  • Step 3
    When vegetables are done bring soup back to boil and add tortellini (follow package directions for cooking time)
  • Step 4
    Once the Tortellini is cooked add spinach to the soup pot and cook just until spinach is wilted well.
