Ingredients
- olive oil or cooking oil
- 6 thin boneless pork chops
- 2 cups instant white rice
- 2 cups water
- 1 bag frozen broccoli in a steamer bag (12 oz)
- 1 bottle sweet and sour sauce (14.5 oz.)
- 1 cup pineapple tidbits, drained
- salt and pepper, to taste, optional
- OPTIONS:
- 2 - 3 boneless skinless chicken breasts or thighs
- cooked rotisserie chicken
- 15 or so breaded chicken tenders
- 1/2 large green pepper, cut into strips
- 4 cups prepared brown (or other type of) rice
How To Make time-saver sweet and sour pork bowls

Step 1Start heating up a skillet with a little olive oil over medium heat, if you’re using raw pork, raw chicken, or green pepper strips. If using chicken nuggets, preheat the oven or air fryer, as directed. Cook the nuggets until done.

Step 2Cube raw pork or chicken and start sautéing in the heated skillet. Add green pepper strips, if desired. Stir often to brown all sides of the meat. If using rotisserie chicken, cube it and set it aside. Sauté the green pepper strips until about tender-crisp, then add the rotisserie chicken to just warm through.

Step 3In the meantime, add 2 cups of instant white rice to a medium-sized microwave-safe casserole dish or bowl. Stir in 2 cups of water. Cover with the casserole lid or plastic wrap. Microwave for 5 minutes, then remove from the microwave and keep covered for another 5 minutes for the water to absorb. Then fluff with a fork.

Step 4As soon as the rice is out of the microwave, microwave a bag of broccoli, if desired, back side up, as directed, and microwave for 4 1/2 minutes. Remove from microwave.

Step 5After about 8-10 minutes, the meat in the skillet should be cooked through and the green pepper should be tender-crisp. Pour in the bottle of sweet and sour sauce and the pineapple tidbits. Heat through about 3 minutes. If you didn’t use a skillet, put the sweet and sour sauce into a microwave-safe bowl. Stir in the pineapple tidbits (and rotisserie chicken, if using) and microwave for about 2-3 minutes, until hot. Or stir in the cooked chicken tenders when the sauce is hot.

Step 6Open the hot bag of cooked broccoli carefully. Chop into smaller pieces, if you want, and stir into the sweet and sour mixture.

Step 7When everything is ready, divide the rice into the bowls and then divide the sweet and sour meat mixture over the rice. Salt and pepper to taste. Enjoy! =^..^=
