This is a meal that I make each year for my Families Three Kings celebration,which is a recipe from my Grandmother in Puerto Rico. Some people call it 12th Night which is celebrated 12 days after Christmas.

Ingredients
- 1 large pork shoulder roast with skin
- 2 cups mojo marinade(found in the spanish food isle)
- 2 tablespoons adobo powder
- 2 tablespoons garlic
- 2 teaspoons dry basil
- 2 teaspoons dry oregano
- 1 large backing pan
- - foil
- - white rice
How To Make three kings roast pork

Step 1wash pork and place in pan

Step 2mix all ingredients in a bowl set aside

Step 3with skin side up put slits in skin and pour liquid over pork

Step 4place pork in fridge covered over night to marinade in a large bowl or zip-top bag

Step 5next morning bring pork to room temperature while you preheat oven to 375
-
Step 6dry with paper towels and place pork in baking pan

Step 7add the marinade and water just about 1 inch deep (add more as needed during cooking)and place in oven covered

Step 8after 3 hours uncover pork and cook till meat is just starting to fall apart and skin is hard and crisp

Step 9take out and let sit for 5-10 minutes so it is easy to handle and slice or pull apart as needed

Step 10to cut skin up into small pieces I use a kitchen shear

Step 11with drippings just heat and serve on the side with white rice
