this ain’t no egg mc muffin
This is a quick and easy { breakfast for dinner idea }. Normally I would have made 3 patties from the breakfast sausage, but I only had the two bangles left, so these were very hardy breakfast sandwiches. You can use any type of bagel and sausage that you like. Brew a fresh pot O coffee and you’re good to go!

Ingredients
- - 2 everything bagels { or bagel of your choice }
- - 3 large eggs
- - smidge of milk { 1 tablespoon }
- - ¼ cup of finely minced red onion
- - 1 roll breakfast sausage { your choice } we like the hot variety
- - 2 slices extra sharp cheese
- - 2 tablespoon unsalted butter
- - 1 teaspoon turbinado sugar
- - 1 teaspoon fine sea salt
- - 1 teaspoon fresh ground pepper
How To Make this ain’t no egg mc muffin

Step 1Divide the sausage in ½ and make two patties. Fry them till they are completely done.

Step 2While the sausage is cooking, sauté the red onions in the butter and sugar.

Step 3Break the eggs into a bowl and add the 1 tablespoon of milk, salt and pepper to them and whisk. When the onions are soft add the eggs to them and scramble. Add a wee bit more butter if necessary.

Step 4While the eggs are cooking, slice the bagels in ½ and toast.

Step 5Spread some butter on the bottom ½ of the bagel.

Step 6Top with the sausage patty and cheese.

Step 7Put the eggs on top.

Step 8And then put the top ½ on.
