I started making this yummy stew years ago for my family and its been a hit every time :)

  • 32 oz
    chicken broth
  • 16 can(s)
    coconut milk, unsweetened
  • 1 lb
    chopped pork
  • 1
    chopped onion
  • 2
    chopped carrots
  • 3 Tbsp
    red curry paste
  • 1''
    grated ginger
  • 2 clove
  • 2 large
    potatoes chopped
  • 1 tsp
    salt or to taste
  • 2-3 Tbsp
    chopped cilantro

How to Make The Perfect Rainy Day Curried Pork Stew


  1. season the chopped pork with the salt, then cook in a skillet to golden brown in just a touch of coconut oil
  2. add the veggies cooking for a couple minutes including the potatoes, then add the remaining engredients on medium heat, *except the coconut milk..reserve some cilantro for topping.
  3. simmer 30 minutes, then add the coconut milk and simmer another 30 minutes covered..serve with cooked rice
