Ingredients For thai pork and pineapple curry

  • 2 lb
    pork shoulder, cut into chunks
  • salt and pepper
  • 2 Tbsp
    olive oil
  • 4 clove
    garlic, minced
  • 1/2 c
    malt vinegar
  • 1/2 c
    brown sugar
  • 3 Tbsp
    tomato paste
  • 1 md
    tomato, chopped
  • 1 sm
    onion, chopped
  • 1 c
    pineapple, cut into chunks
  • 1/2 lg
    English cucumber, peeled and chopped
  • 1/2 md
    red bell pepper, sliced thin
  • 1 sm
    jalapeno, seeded and chopped
  • 2
    scallions, chopped
  • cilantro, for garnish
  • cooked rice for serving

How To Make thai pork and pineapple curry

    Season the pork with salt and pepper. Add the olive oil to a Dutch oven. Brown the pork and then add the vinegar and brown sugar. Cover and cook on low for 1 1/2 hours until the meat is tender.

    Remove the cover and stir in the tomato paste. Once mixed well, add the tomato, onion, red pepper, and jalapeno.

    Cook 5 minutes. Add the pineapple and cucumber and cook 5 minutes. Stir in the scallions. Cook 1 minute.

    Serve over rice and garnish with cilantro.
