1/2 cbrown sugar

1 mdtomato, chopped

1 smonion, chopped

1 cpineapple, cut into chunks

1/2 mdred bell pepper, sliced thin

1 smjalapeno, seeded and chopped

2scallions, chopped

cilantro, for garnish

How To Make thai pork and pineapple curry

1Season the pork with salt and pepper. Add the olive oil to a Dutch oven. Brown the pork and then add the vinegar and brown sugar. Cover and cook on low for 1 1/2 hours until the meat is tender.

2Remove the cover and stir in the tomato paste. Once mixed well, add the tomato, onion, red pepper, and jalapeno.

3Cook 5 minutes. Add the pineapple and cucumber and cook 5 minutes. Stir in the scallions. Cook 1 minute.

4Serve over rice and garnish with cilantro.
