Ingredients
- 2 pounds pork shoulder, cut into chunks
- salt and pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup malt vinegar
- 1/2 cup brown sugar
- 3 tablespoons tomato paste
- 1 medium tomato, chopped
- 1 small onion, chopped
- 1 cup pineapple, cut into chunks
- 1/2 large English cucumber, peeled and chopped
- 1/2 medium red bell pepper, sliced thin
- 1 small jalapeno, seeded and chopped
- 2 scallions, chopped
- cilantro, for garnish
- cooked rice for serving
How To Make thai pork and pineapple curry

Step 1Season the pork with salt and pepper. Add the olive oil to a Dutch oven. Brown the pork and then add the vinegar and brown sugar. Cover and cook on low for 1 1/2 hours until the meat is tender.

Step 2Remove the cover and stir in the tomato paste. Once mixed well, add the tomato, onion, red pepper, and jalapeno.

Step 3Cook 5 minutes. Add the pineapple and cucumber and cook 5 minutes. Stir in the scallions. Cook 1 minute.

Step 4Serve over rice and garnish with cilantro.
