I call it the Texas Taco..I have been making this recipe for over 25 years. My neighbors would beg me to make it for them and teach them how to make em'. I havent met anyone yet that doesnt like them..I hope everyone who makes these will like them as well

Ingredients
- 8 medium potatoes, diced and cubed
- 1 pound ground sausage
- 9 - eggs
- 5-6 tablespoons milk
- 1 - small box of velvetta(sliced)
- 1 package flour tortillas
- - picante sauce(optional)
- - sour cream (optional)
How To Make texas tacos

Step 1In a large skillet or electric fry pan(is better)fry potatoes in oil til tender,drain excess oil and set potatoes aside, in the same skillet, cook the ground sausage. While the sausage is cooking, scramble the eggs with milk in a medium bowl. When the sausage is done cooking, drain and return to skillet along with the cooked potatoes, heat through then add the scrambled egg mixture to the skillet, cook eggs(not all the way) slice the velvetta cheese and layer on top of mixture in skillet, turn heat down to lowest temperature possible, wait for cheese to melt and stir mixture to completely mixed, warm the tortillas and place some mixture on warm tortillas enjoy with picante sauce and sour cream..good for any meal.
