The homemade pineapple teriyaki sauce is so good. Pairing it with the savory pork and the pineapple salsa makes the dish. Be sure not to overcook the pork. It's ok if it is a bit pink.

Ingredients

  • MARINADE
  • 1/4 cup pineapple juice
  • 1 1/2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 4 thick cut pork chops
  • TERIYAKI SAUCE
  • 3 teaspoons corn starch
  • 1/4 cup pineapple juice
  • 3 teaspoons soy sauce
  • 3 tablespoons dark brown sugar
  • PINEAPPLE SALSA
  • 1 1/2 cups fresh pineapple, cut into small chunks
  • 1 large jalapeno, seeded and minced
  • 2 tablespoons small dice red onion
  • 2 tablespoons chopped cilantro
  • FOR FRYING
  • 3 tablespoons olive oil
  • salt and pepper

How To Make teriyaki glazed pork chop with pineapple salsa

  • Step 1
    Mix the marinade ingredients together and add the pork chops. Let it marinate overnight in the fridge.
  • Step 2
    Mix the ingredients for the teriyaki sauce in a saucepan. Bring to a boil and cook until thickened. Place in the refrigerator.
  • Step 3
    Mix the salsa ingredients together and place in refrigerator to meld the flavors.
  • Step 4
    Preheat oven to 450 degrees F. Remove the pork from the marinade and discard the marinade. Season the pork with salt and pepper.
  • Step 5
    Add the oil to a large oven-safe skillet. Sear the pork for about 5 minutes on one side.
  • Step 6
    Turn the pork and brush with the teriyaki sauce. Sear on the other side.
  • Step 7
    Turn again and pour in the remaining teriyaki sauce.
  • Step 8
    Place in the oven for 5 minutes. Turn and roast another 5 minutes. Serve with the pineapple salsa.
