This dish is a FAVORITE in my house! There are 7 in my family and everyone loves it! As soon as they walk in the house they know what's cooking! I always double this recipe. Leftovers, if any, are great for lunches the next day!

Ingredients

  • 2 lbs. - potatoes, peeled and cubed
  • 3-4 - green onions, diced
  • 2 cloves - garlic, minced (i always put extra in)
  • 2 tablespoons butter
  • 3/4 cup milk
  • 2 - egg yolks
  • dash - each pepper and nutmeg
  • 2 tablespoons dried parsley flakes
  • 1 pound smoked sausage, sliced (kielbasa)
  • 1/2 cup diced mozzarella cheese
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon dried thyme or sage

How To Make taters and sausage bake

  • Step 1
    Cook potatoes in boiling water until tender;drain and transfer to a mixing bowl;mash potatoes.
  • Step 2
    Add onions, garlic, butter, milk, egg yolks, pepper and nutmeg; beat until light and fluffy.
  • Step 3
    Stir in parsley, sausage and cheeses.
  • Step 4
    Spoon into a greased 2-quart baking dish.
  • Step 5
    Sprinkle with thyme.
  • Step 6
    Bake, uncovered, @ 400* for 30 minutes or until lightly browned and heated through.
