Taters and Sausage Bake

This dish is a FAVORITE in my house! There are 7 in my family and everyone loves it! As soon as they walk in the house they know what's cooking!
I always double this recipe. Leftovers, if any, are great for lunches the next day!

  • 2 lbs.
    potatoes, peeled and cubed
  • 3-4
    green onions, diced
  • 2 cloves
    garlic, minced (i always put extra in)
  • 2 Tbsp
  • 3/4 c
  • 2
    egg yolks
  • dash
    each pepper and nutmeg
  • 2 Tbsp
    dried parsley flakes
  • 1 lb
    smoked sausage, sliced (kielbasa)
  • 1/2 c
    diced mozzarella cheese
  • 2 Tbsp
    grated parmesan cheese
  • 1 tsp
    dried thyme or sage

How to Make Taters and Sausage Bake


  1. Cook potatoes in boiling water until tender;drain and transfer to a mixing bowl;mash potatoes.
  2. Add onions, garlic, butter, milk, egg yolks, pepper and nutmeg; beat until light and fluffy.
  3. Stir in parsley, sausage and cheeses.
  4. Spoon into a greased 2-quart baking dish.
  5. Sprinkle with thyme.
  6. Bake, uncovered, @ 400* for 30 minutes or until lightly browned and heated through.
