tater gem casserole

My children always loved this recipe when they were young. This casserole, a green salad and some cheddar cheese biscuits was pretty much the comfort meal of choice in the winter. It can be made with ground chicken, turkey, pork or beef. I must say my preference is pork.

Ingredients
- 1 1/2 kilograms ground pork
- 1 can cream of mushroom soup
- 2 cups frozen cubed vegetables
- 1 medium onion (finely chopped)
- 2 teaspoons garlic powder
- 1 package tater gems
- 1 1/2 cups shredded sharp cheddar cheese
How To Make tater gem casserole

Step 1In large bowl, add ground pork, salt & pepper, frozen vegetables, chopped onion, garlic powder and 2/3 of the condensed cream of mushroom soup and mix all together.

Step 2Spread meat mixture in 9" x 13" casserole dish. Arrange tater gems across top of meat mixture. To remaining 1/3 can of soup, add water to top of can and mix together with soup. Pour over tater gems that you have lined up in dish.

Step 3Place casserole in 375 deg. oven for approx. 75 mins. (I always place casserole in oven on cookie sheet to catch any spills. Saves on oven cleaning.)

Step 4Sprinkle grated cheese over tater gems and return to oven until cheese is melted (about 5 - 8 mins.) Remove from oven and let stand for at least 10 mins. before serving.
