This is another dish I got from a lady at The Independent Living group when they had a dinner. Its a recipe with a little bite but boy is it yummy.Enjoy!!!!!!!!!!

Pan Fry


1 1/2 tsp
ground cumin
1 tsp
chili powder
1/2 tsp
1/4 tsp
ground red pepper
1 lb
pork tenderloin, cut into 1 inch cubes
1 Tbsp
olive oil, divided
1 can(s)
cooking spray
1 large
onion, chopped
1 tsp
garlic, minced
2 c
tomatillos, chopped
2 c
tomatoes, chopped
1/2 c
cilantro, fresh, chopped
4 c
minute rice

  • 1Cook rice according to directions on box and drain.Combine the first 4 ingredients in a medium bowl. Add pork; toss well. Heat 1 1/2 tsp. oil in large non-stick skillet coated with cooking spray. Add pork; saute 3 minutes. Remove pork fram pan; keep warm. Heat 1 1/2 tsp. in pan over medium high heat. Add onion and garlic; saute 30 seconds. Add tomatillos; saute 4 minutes. Add pork; Cover and cook 5 minutes or until pork is done. Add tomatoes and cilantro; cover and cook for 1 minute. Serve with rice.
