tangy pork with tomatillos,tomatoes,cilantro

This is another dish I got from a lady at The Independent Living group when they had a dinner. Its a recipe with a little bite but boy is it yummy.Enjoy!!!!!!!!!!

Ingredients

  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1 pound pork tenderloin, cut into 1 inch cubes
  • 1 tablespoon olive oil, divided
  • 1 can cooking spray
  • 1 large onion, chopped
  • 1 teaspoon garlic, minced
  • 2 cups tomatillos, chopped
  • 2 cups tomatoes, chopped
  • 1/2 cup cilantro, fresh, chopped
  • 4 cups minute rice

How To Make tangy pork with tomatillos,tomatoes,cilantro

  • Step 1
    Cook rice according to directions on box and drain.Combine the first 4 ingredients in a medium bowl. Add pork; toss well. Heat 1 1/2 tsp. oil in large non-stick skillet coated with cooking spray. Add pork; saute 3 minutes. Remove pork fram pan; keep warm. Heat 1 1/2 tsp. in pan over medium high heat. Add onion and garlic; saute 30 seconds. Add tomatillos; saute 4 minutes. Add pork; Cover and cook 5 minutes or until pork is done. Add tomatoes and cilantro; cover and cook for 1 minute. Serve with rice.
